Greek Roast Potatoes With Lemon And Feta – 1 Easy Recipe Eve

2 lbs (900g) Yukon gold or baby potatoes, halved

¼ cup olive oil

Juice of 1 large lemon

4 garlic cloves, minced

1 teaspoon dried oregano

Salt and black pepper, to taste

½ cup crumbled feta cheese

2 tablespoons chopped fresh parsley (optional)

Fremgangsmåte

Preheat oven to 400°F (200°C).

In a large bowl, toss halved potatoes with olive oil, lemon juice, garlic, oregano, salt, and pepper.

Spread potatoes cut-side down on a parchment-lined baking sheet.

Roast for 35–40 minutes, flipping halfway, until golden and tender.

Remove from oven and immediately sprinkle with crumbled feta and parsley.

Serve warm and enjoy!
