1 small onion, diced

1/2 bell pepper, diced

2 cups baby spinach, chopped

1 1/2 cups cottage cheese

4 large eggs

1 cup shredded cheddar cheese (or a cheddar/ mozzarella blend)

1/2 cup milk

1/2 tsp garlic powder

1 tsp Italian seasoning

Salt and pepper to taste

Fremgangsmåte

Preheat oven to 350°F (175°C).

Heat olive oil in a skillet. Sauté diced onion and bell pepper until soft, about 3-4 minutes.

Add chopped spinach and cook until wilted, about 2-3 minutes. Season with garlic powder, salt, and pepper.

In a large bowl, whisk together eggs, milk, and cottage cheese. Stir in Italian seasoning, salt, and pepper.

Fold in shredded cheese, then stir in sautéed vegetables until evenly mixed.

Grease a 9-inch pie dish. Pour in the mixture and spread evenly.

Bake for 40-45 minutes, or until the center is set and top is golden. Let cool 5-10 minutes before serving.

Notes

Use full-fat cottage cheese for the creamiest texture.
