Tokyo Salad

Ingredienser

INGREDIENTS • 2 cups chopped romaine lettuce • 2 cups mesclun greens • ¼ cup shredded carrot • ¼ cup shredded red cabbage • ¼ cup small broccoli florets • ¼ cup diced cucumber • ½ cup Roasted Marinated

Tofu (page 148)

• 2 tablespoons black and white sesame seeds

• 2 tablespoons diced red onion (optional)

Fremgangsmåte

DIRECTIONS Combine all of the ingredients in a large stainless-steel bowl. Top with the dressing, and using tongs, toss until well mixed

and dressed.

REBECCA | When we think of Japanese food, we think simplicity, elegance, purity... This is a vegan salad that features one of our best-selling dressings, full of that coveted umami. The ingredients are all raw, save for the miso- citrus-marinated tofu, and the dressing is a nutty tamari-garlic party in your mouth. Fun fact: this is one of my favorite salads, and I usually add diced red onions for extra crunch and punch. I suggest you do the same!
