Beignets

Yeast mixture:
1/4 ounce packet active dry yeast
3/4 cup lukewarm water
1 teaspoon sugar
Dough:
Yeast mixture (above)
4 cups bread flour
1/3 cup sugar
1 large egg
3 tablespoons melted butter
1/2 cup whole milk
1 tablespoon vanilla extract
60 ounces vegetable oil
Powdered sugar as desired
Fremgangsmåte
Combine the yeast, water, and sugar in a bowl and mix until well combined. Let sit for about 10 minutes.
Add the egg, vanilla extract, sugar and butter into the yeast mixture and mix until well combined.
Add the flour then mix until a dough forms. Knead the dough for about 5-7 minutes, place in an oiled bowl and let it sit, covered until it doubles in size (about an hour).
Roll the dough out until it’s about a half centimeter in thickness, then divide the dough into roughly even 2-3 Inch pieces or as you like.
Heat the oil up to about 360° in relatively deep pan and fry the beignets on both sides until golden brown, about 90 seconds per side.
Sprinkle with powdered sugar and enjoy.
