Beef and Pumpkin Stew

olive or avocado oil
2 lb stew beef
1 red onion, chopped
4 garlic cloves, chopped
1 white sweet potato, chopped
1 15 oz can pumpkin purée
4 cups bone broth
1 tbsp apple cider vinegar
1 tsp sea salt
1 tsp oregano
1 tsp basil
1 tsp rosemary
1 tsp thyme
Fremgangsmåte
Heat the oil in a dutch oven over medium heat with garlic and onions. Start cutting fat off the stew meat and add to pot.
Stir as it cooks. Cook it until no pink remains.
Add acv, bone broth and pumpkin purée. Give it a stir and bring it to a boil. Add white sweet potatoes.
Lower the heat to low/medium. Add the seasonings, cover the pot, and allow it to simmer for at least an hour.
