I love good food.
But I hate complicated recipes.
This Hasselback Chicken is one of my new favorites because it looks impressive, tastes amazing and is ridiculously easy to make.
The grill grate hack gives you perfect Hasselback cuts every time, and the combination of pesto, mozzarella and sun-dried tomatoes takes ordinary chicken to a whole new level.
RECIPE 👇🏻
4 chicken breasts (about 1.75 lbs / 800 g)
4 ½ oz (125 g) mozzarella pearls
8–10 sun-dried tomatoes, chopped
2 tbsp pesto
1 tbsp olive oil
Vegetables:
2 large sweet potatoes, diced
2 heads broccoli, cut into florets
2 red onions, cut into wedges
9 oz (250 g) cherry tomatoes
Seasoning:
2 tbsp olive oil
Your favorite italian seasoning blend
Salt and black pepper to taste
Fremgangsmåte
Place a grill grate over the chicken and cut Hasselback-style slits without slicing all the way through.
Fill the slits with sun-dried tomatoes and mozzarella pearls.
Mix pesto with 1 tbsp olive oil and brush over the chicken.
Place the chicken in a baking dish.
Add the sweet potatoes, broccoli, red onion and cherry tomatoes to a sheet pan. Drizzle with olive oil and your favorite seasoning.
Bake both the chicken and vegetables at 400°F (200°C) for 30 minutes.
