3 large eggs, separated
3 tbsp honey or maple syrup
1 tsp vanilla extract

½ cup oat flour (or almond flour for gluten-free)

Fremgangsmåte
Step 1: Prep the Oven
Preheat oven to 350°F (175°C). Line a small springform pan with parchment paper.
Step 2: Mix the Base
In a bowl, blend cottage cheese, egg yolks, honey, vanilla, orange zest, and orange juice until smooth. Stir in oat flour, baking powder, and salt.
Step 3: Whip Egg Whites
In a separate bowl, beat egg whites until stiff peaks form. Gently fold them into the batter to keep it airy.
Step 4: Bake
Pour the mixture into the prepared pan. Bake for 30–35 minutes until puffed, golden, and set in the center.
Step 5: Cool & Serve
Let it cool before slicing. Enjoy as a light, fluffy, citrusy, protein-packed cake.
