Steak Au Poivre with Creamy Mushroom Orzo

For the steak:
1 ribeye steak (@Wagyuwala)
Kosher salt
Coarsely ground black pepper
Olive or neutral oil
2–3 tbsp unsalted butter
3 garlic cloves, smashed
Few sprigs thyme and rosemary
For the orzo:
8 oz cremini mushrooms, sliced
1 shallot, finely diced
2 garlic cloves, grated or minced
1 1/2 cups dry orzo
Salt and black pepper
1/4 cup white wine
2 1/2 cups beef broth (plus more if needed to loosen)
1 tbsp butter
1 cup freshly grated Parmesan
1/4 – 1/2 cup crème fraîche (can sub cream)
1 tsp Dijon mustard
1 splash Worcestershire sauce
Chopped chives, to garnish
For the au poivre drizzle:
2 tbsp unsalted butter
1/2 small shallot, finely diced (optional)
2 tsp coarsely ground black pepper
Splash of white wine
1/4 cup beef broth
1/4 cup heavy cream
1 tsp Dijon mustard
