Crispy Carrot Fries with Whipped Honey-ricotta & Pistachio G

For the carrots:
1 lb carrots, cut into fries
2 tbsp La Tourangelle avocado oil
3/4 tsp salt
3/4 tsp paprika
3/4 tsp onion powder
1 tsp dried oregano
1 tbsp corn starch
For the ricotta:
3/4 cup ricotta
1 tbsp honey
1/4 tsp salt
Pepper to taste
1 tsp lemon juice
For the gremolata:
1/4 cup pistachios
1/2 cup packed fresh basil
1/2 tbsp La Tourangelle olive oil
1/4 tsp salt
Pepper to taste
1 clove garlic, minced
1/2 tsp lemon zest
Optional toppings:
Chopped scallions
Feta cheese
Honey

Preheat the oven to 425. Place a sheet pan in the oven while it preheats.2️⃣Next, add the salt, paprika, onion powder and oregano to a small bowl and mix to combine. Add the carrots to the hot sheet pan and bake for 30-35 minutes, flipping halfway. 3️⃣While the carrots roast, mix together the ricotta and gremolata. Add the ricotta, honey, salt, pepper and lemon juice to a small bowl and mix to combine. Set aside, then add the pistachios and basil to a food processor or small blender and process until it creates a sort of paste. Add that mixture to a small bowl with the salt, pepper olive oil, garlic and lemon juice. Mix together and set aside. 4️⃣Spread the ricotta onto a plate, then top with the carrots, then the crumble, scallions, feta and a drizzle of honey, if desired.
