Vegetable Medley:

1500g zucchini squash (10)

750g sweet potato’s (2)

250g carrots (8oz)

45g avocado/olive oil (3 Tbsp)

Salt, pepper, garlic, oregano, chili flakes

Bake at 425, 40-50 mins, broil 5-10 mins

Chicken Parm:

64oz chicken breast (7 medium-large)

Salt, pepper, garlic

350g marinara (50g per)

280g cottage cheese (40g per)

70g parmigiano reggiano (10g per)

Notes:

In the video I also used yellow squash, but found it doesn’t reheat as well as zucchini, so I replaced it with zucchini entirely. Feel free to sub in/out any vegetables you prefer (or serve over pasta 🍝)

COMPOSTABLE MEAL PREP CONTAINERS:

Other “paper” meal prep containers exist, but ours are the only ones made entirely from sustainable bamboo shoots and plant fibers (instead of using trees as our source material - which is significantly less sustainable)

Other containers are lined with BPA plastic and/or use plastic lids - ours use a plant-based lining, zero BPA plastics or microplastics, and are fully compostable.
