Three Salad Dressings I Make on Repeat as a Private Chef

These are the ones I come back to again and again because they’re simple, versatile and take minutes to make. I like to keep them in jars in the fridge so there’s always an easy homemade dressing ready to go.
My honey mustard vinaigrette is creamy, tangy and perfect with a simple green salad or tossed through warm new potatoes.
The lemon dressing is incredibly simple, but has the most brilliant colour and is lovely with fish or grilled vegetables.
And finally, my garlic and white balsamic vinaigrette. White balsamic is probably my favourite vinegar, and its sweetness works so well with the punchy fresh garlic. I love this one with a simple tomato salad or mozzarella.
MUSTARD VINAIGRETTE
3 tbsp olive oil
2 tsp Dijon mustard
2 tsp apple cider vinegar
1 tsp agave, maple syrup or honey
Salt and pepper
LEMON VINAIGRETTE
Juice of 1 lemon
4 tbsp olive oil
Plenty of flaky sea salt
GARLIC AND WHITE BALSAMIC VINAIGRETTE
1 garlic clove, finely grated
1 tbsp white balsamic vinegar
1 tbsp agave
4 tbsp olive oil
Salt and pepper
