Muffin tin Tacos

These are layers of seasoned ground beef and sharp cheddar packed into little wonton wrappers that get wonderfully crunchy in the oven. It is basically a miniature handheld dinner that actually stays together when you pick it up. 🌮

1 lb ground beef

2 tbsp taco seasoning

24 square wonton wrappers

1 ½ cups shredded cheddar cheese

1/2 cup diced tomatoes

1/4 cup sour cream

I browned the ground beef in a skillet and stirred in the taco seasoning along with a splash of water until the sauce thickened up.

Then I gently pushed one wonton wrapper into the bottom of each muffin cup to create a hollow shape.

I dropped a small spoonful of the warm meat mixture into the wrappers and sprinkled a pinch of cheese right over that.

Pressed a second wrapper lightly on top and added another layer of meat followed by a heavy handful of cheese.

Baked them until the exposed wrapper edges turned deep golden and the top layer was completely bubbled over.

Popped them out using a butter knife and added a tiny dollop of sour cream and some tomatoes to each stack.

Press the bottom wrapper down firmly into the corners of the tin so your heavy filling actually has a solid base to sit in. 🧀
