Ingredienser

2 lbs cooked and shredded chicken

3-4 carrots, peeled and diced

1 onion, diced

3-4 pieces celery, diced

1 tbsp butter

3-7 cloves garlic, minced

8 cups chicken broth

1 ½ cups orzo

1/2 cup fresh squeezed lemon juice

2 eggs

Salt or herbamare

pepper

Oregano (optional but I like to add it)

Method: Saute your carrots, onion, and celery in your butter until your onions are translucent. Add in your garlic and continue to sauté for 1-2 mins. Add in your chicken, broth, bay leaves, and seasonings and bring to a light boil. Add in your orzo and cook according to package instructions. While your pasta is cooking, add your lemon juice and eggs in a separate bowl and mix until your eggs are beaten. Remove your soup from the heat when your pasta is cooked. Working quickly, add 2-3 ladles of broth to your egg mixture to temper the eggs, stirring as you are adding the broth. Put your soup back on the heat at the lowest temperature possible. Add back in your egg mixture slowly while stirring your soup. Remove from heat and serve with a little olive oil if desired.
