Cold Gochujang Summer Squash Salad

Ingredienser

Ingredients:

•1–2 yellow squash, thinly sliced into ribbons or rounds

•1 tsp salt

•1 tbsp gochujang

•1 tsp sesame oil

•1 tsp rice vinegar

•1/2 tsp sugar

•1 garlic clove, finely grated

•Optional: thinly sliced cucumber or carrot

Fremgangsmåte

Instructions:

1.Sprinkle salt over squash slices and let sit 10–15 minutes. Drain and gently squeeze.

2.Mix gochujang, sesame oil, vinegar, sugar, and garlic in a bowl.

3.Toss squash (and any optional veggies) with the sauce.

4.Chill and serve as a spicy side.
