Slower Cooker Chicken

You’ll need:
For the chicken:
600 g chicken breast 
1 onion 
3 cloves garlic 
5–6 sun-dried tomatoes 
10 mL sun-dried tomato oil 
100 mL chicken stock 
1 tsp oregano 
1 tsp salt 
1 tsp chilli flakes 
80 mL double cream 
60 g Parmesan cheese 
2 handfuls of spinach 
For the potatoes:
600 g potatoes 
20 g light butter 
Garlic salt 
1 garlic clove 
1 tsp oregano

Chicken: Start by seasoning the chicken with 1 tsp cornflour, 1 tsp salt, and a drizzle of olive oil (optional but enhances the flavour). Place the chicken, onion, garlic, sun-dried tomatoes, tomato oil, and chicken stock into the slow cooker. Cook on high for 2 hours or on low for 4 hours. 
After cooking, turn the slow cooker to low or off. Stir in the double cream, Parmesan cheese, and spinach. Let this sit for 20–30 minutes to thicken. 
Potatoes: Chop the potatoes into cubes. You can parboil them if needed, but I use Cypress potatoes which are soft enough to go straight into the air fryer. Wash them, then coat with a bit of olive oil, garlic salt, and oregano. 
Air fry at 200°C for 15 minutes. 
Add 20 g light butter, a minced garlic clove, and oregano, then cook at 170°C for another 5 minutes. Adjust cooking time as needed based on your preference. 
Serve everything in a bowl, topped with extra Parmesan if desired. This makes about 3–4 portions, depending on your appetite.
