Passover Banana Bread

3 eggs

2 ripe bananas

3/4 cup sugar

1/2 cup oil

Pinch of salt

Cinnamon to taste

1 cup almond flour

1 cup tapioca starch

1 teaspoon baking powder

Chocolate chips and chopped nuts (to taste)

Instructions

1. Preheat the oven to 380°F (190°C).

2. Mash the bananas in a bowl.

3. Add the eggs, sugar, oil, and mix well with the mashed bananas.

4. In a separate bowl, combine the dry ingredients: almond flour, tapioca starch, baking powder, salt, and cinnamon.

5. Add the dry ingredients to the wet mixture and stir until combined.

6. Fold in chocolate chips and nuts.

7. Pour the batter into a medium-sized greased pan.

8. Bake for 30–40 minutes, or until a toothpick comes out clean.

9. Let it cool completely before unmolding.
