Ground Beef & Sweet Potato Bowls

Ingredienser

2 lbs 90% lean ground beef

4 medium-large sweet potatoes, halved

2 large heads of broccoli, cut to small florets

1 tbs minced garlic

1 tbs tomato paste

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

salt and pepper

olive oil for cooking

Fremgangsmåte

place the halved sweet potatoes on a baking sheet, drizzle with 1 tbs oil, season with salt and pepper, and place flat side down; roast at 400F for about 30 min until tender with crisp and caramelized edges

place the broccoli florets on a baking sheet, drizzle with 1 tbs oil, and season with salt and pepper; roast at 400F for about 25 min until crisp and tender

heat a large pan on medium-high heat, add 1 tsp oil, and get a nice crust on both sides of the beef

break the beef into smaller bits, season with garlic powder, onion powder, smoked paprika, salt, and pepper

add in minced garlic and tomato paste; mix well and cook until beef is no longer pink

build the bowls and store in the fridge for up to 5 days or in the freezer for up to 6 months
