Vegan Marry Me Butter Beans

Ingredienser

  • x3 cans of butter beans

  • 150g sundried tomatoes

  • 1 large red onion or 2 small ones

  • x1 packet of baby spinach

  • Small bunch of basil

  • 3tsp oregano

  • 3tsp thyme

  • x6 cloves of garlic, finely chopped

  • 70g cashews

  • 10 tbsp nooch

  • 300ml plant milk, unsweetened

Fremgangsmåte

  1. Soak your cashews in a bowl of boiling water for 10 mins and cover to trap the steam.

  2. Finely chop your onions and garlic and sundried tomatoes. Fry the onions and tomatoes in some of the oil from the jar for 5 mins. Then add the garlic and mix until fragrant.

  3. Blitz the cashews with the plant milk and nooch until super smooth and creamy.

  4. Add the dried herbs to the onions and tomatoes and garlic, leave simmering until fragrant.

  5. Add the butter beans with 3/4 of their water (keep the rest just in case it needs loosening later). Give it a mix in and fry for a couple more minutes.

  6. Add the cashew dressing into the pan and bring to a simmer for 3-4 mins.

  7. Add your packet of spinach.

  8. Season with salt and pepper.

  9. Serve with a toasted piece of sourdough and top with some fresh basil.
