For salad

½ cupblack lentils, rinsed

½ tspkosher salt

1 15 oz can chickpeas,drained and rinsed

1 pintcherry tomatoes or grape tomatoes, halved

1bell pepper, diced

½ Ibdiced cucumbers

½ cuphalved pitted kalamata olives

¼ cupfinely diced red onions

8 ozfeta cheese, cut into 1/4-inch to 1/2-inch cubes

2 tbspchopped parsley

For vinaigrette

1garlic clove, minced

1 tospwhole grain mustard

¼ tspdried oregano

½ tspkosher salt

¼ tspblack pepper

1lemon,juice

2 tbspred wine vinegar

¼ cupolive oil
