1/3 cup panko breadcrumbs (or crushed rice cereal for gluten-free)

1 tbsp cornstarch

1/2 tsp garlic powder

1/4 tsp black pepper

Olive oil spray

Korean Gochujang Sauce

1 tbsp gochujang (Korean chili paste)

1 tbsp low-sodium soy sauce (or liquid aminos)

1 tbsp honey (or maple syrup)

1 tsp sesame oil

1 tsp rice vinegar

1 tsp minced garlic

1 tbsp water (to thin)

Asian Cucumber & Carrot Salad

1 cup cucumbers, thinly sliced (Persian or English work best)

1/2 tsp salt

1 tsp rice vinegar

1/2 tsp sesame oil

1/2 tsp honey

1/2 tsp chili flakes or gochugaru (optional)

1/2 tsp sesame seeds
