Greek Chicken Gyros

1 pound boneless, skinless chicken breasts
3 tablespoons extra virgin olive oil
3 cloves garlic, minced
Juice of 1 lemon (about 2 tablespoons)
1 tablespoon dried oregano
1 teaspoon smoked paprika
Salt and pepper to taste
4 pieces of warm pita bread
1 cup tzatziki sauce (homemade or store-bought)
Fresh vegetables: sliced tomatoes, red onion, shredded lettuce
Fremgangsmåte
In a bowl, whisk together olive oil, garlic, lemon juice, oregano, paprika, salt, and pepper. Add chicken strips and coat evenly. Marinate for at least 30 minutes (or overnight for best flavor).
Preheat grill or grill pan over medium-high heat. Cook marinated chicken for 5-7 minutes on each side until fully cooked (internal temp of 165°F).
Prepare tzatziki sauce by combining grated cucumber, yogurt, garlic, lemon juice, dill, salt, and pepper in a bowl; chill.
Warm pita bread and layer with grilled chicken, tzatziki sauce, and fresh veggies. Roll tightly and serve.
