Summer Cabbage & Farro Salad
For the Hot Honey Mustard Dressing:
1/4 cup olive oil
1/4 cup red wine vinegar
3 tablespoons minced chives
2 tablespoons honey
1 tablespoon Dijon
2 teaspoons hot sauce
1 teaspoon dried oregano
Kosher salt and freshly ground black pepper
For the Salad:
1 medium head green cabbage, quartered, cored, and thinly sliced
1 1/2 pounds cherry tomatoes, halved
1 1/2 cups dried farro, cooked according to package directions, drained, and cooled
3 ears corn, kernels removed and sautéed in 2 tablespoons olive oil for 4 to 5 minutes with salt and pepper and cooled
2 avocados, pitted, peeled, and diced
Fremgangsmåte
Make the dressing: In a medium bowl, whisk together the dressing ingredients until well incorporated.
Assemble the salad: In a large bowl, toss the salad ingredients with the dressing until well coated. Taste and adjust seasoning with salt and pepper, then serve.
