Ingredienser

CHICKEN

1 pound (454 g) boneless, skinless chicken breast 1 pound (454 g) boneless, skinless chicken thighs

M cup (60 ml) olive oil

6 cloves garlic, minced

2 teaspoons ground cumin

1 teaspoon curry powder

1 teaspoon paprika

1 teaspoon turmeric

1 teaspoon allspice

Pinch cayenne pepper

Salt and pepper, to taste

SAUCE

3/4 cup (175 g) plain Greek yogurt

1/2 cup (120 g) tahini

1/4 cup (60 ml) lemon juice

2 cloves garlic, minced

2 green onions, finely chopped

2 teaspoons ground cumin

Salt and pepper, to taste

1-2 tablespoons olive oil, for frying

PITA ASSEMBLY

4 large or 8 small pitas

Thinly sliced red onions, to taste

Thinly sliced tomatoes, to taste

Thinly sliced cucumber, to taste

Fremgangsmåte

To make the chicken:

Slice the chicken breasts and thighs into 2-inch-thick (5 cm) strips and put them in a large bowl. Add the remaining chicken ingredients and combine, making sure the chicken pieces are evenly coated with oil and spices.

Transfer the coated chicken to a large resealable plastic bag and leave to marinate in the fridge for as long as possible-preferably overnight, but for at least 2 hours.

Preheat the oven to 400°F (200°C). Place the chicken on an aluminum foil-lined baking sheet and roast for about 15 minutes, turning the pieces over halfway through the cooking time. Remove the chicken from the oven and let it rest for a few minutes. Meanwhile, make the sauce.

To make the sauce: Thoroughly combining all the sauce ingredients in a bowl. Set aside.

Thinly slice the cooked chicken. Heat the olive oil in a large skillet, add the sliced chicken, and sauté until it turns brown and crisp on the edges. Make sure not to overcrowd the pan-you may have to do this in batches. You can add some additional spices (from the chicken ingredients) at this point if you like things spicier.

To assemble the pita: If desired, lightly grill your pitas for about a minute on each side. Open the pita and evenly spread the sauce inside, then fill the pocket with the chicken, onions, tomatoes, and cucumber as you prefer. Enjoy!
