2 whole eggs

1/2 cup plain greek yogurt (0%)

1/2 cup any milk (I use 1%)

1 tsp vanilla extract

2 tsp coconut oil

1 heaping cup any flour (I use blended rolled oats)

2 scoops vanilla protein powder

1 tsp baking powder

1/2 tsp baking soda

1 tsp cinnamon

1/2 tsp ginger

1/3 cup sweetener (1 use stevia or splenda brown sugar)

1 cup grated carrot (or more if you like)

Icing:

1/4 cup light cream cheese (I use 95% light)

1 tbsp sweetener

1/4 tsp vanilla

optional: 1/2 scoop vanilla protein powder

Baking Time:

350F for approx 28-30 minutes

Calories/Macros:

97 calories, 8.4g protein, 9g carbs, 3g fat (PER slice of 10)
