4 tablespoons mashed garlic

½ cup bitter orange juice (or lime juice)

¼ cup minced parsley

1 teaspoon salt (or more, to taste)

¼ teaspoon pepper (freshly-cracked, or ground) (or more, to taste)

Making sauce

To make the wasakaka, heat the oil over medium heat. Add the garlic and parsley, and cook stirring for a minute. Pour in bitter orange juice and 1 cup of water and simmer over low heat until it has reduced to half the liquid.Season with salt and pepper to taste.

Serve sauce alongside the chicken or any meat of your preference.
