Mediterranean Baked Fish Recipe (full Recipe

Ingredienser

4 fish fillets (cod, haddock, tilapia, or sea bass work well)

3 tbsp olive oil

3 cloves garlic, minced

1 lemon, sliced

1 cup cherry tomatoes, halved

1/3 cup Kalamata olives, pitted and sliced

1 tsp dried oregano

1/2 tsp paprika

1/2 tsp black pepper

1/2 tsp salt (adjust to taste)

1/4 tsp chili flakes (optional)

2 tbsp fresh parsley, chopped

2 tbsp fresh basil or dill, chopped (optional)

Fremgangsmåte

Preheat oven to 190°C (375°F). Lightly grease a baking dish with olive oil.

Place the fish fillets in the baking dish in a single layer.

In a small bowl, mix olive oil, garlic, oregano, paprika, salt, pepper, and chili flakes.

Pour the olive oil mixture evenly over the fish, making sure it’s well coated.

Scatter cherry tomatoes and olives around and on top of the fish.

Place lemon slices over the fish fillets.

Bake uncovered for 18–22 minutes, or until the fish is opaque and flakes easily with a fork.

Remove from oven and sprinkle with fresh parsley and basil or dill.

Serve immediately.

Serving Suggestions

Serve with roasted vegetables, a fresh Greek salad, steamed rice, or crusty whole-grain bread.

Tips

For extra juiciness, spoon the pan juices over the fish before serving

You can add capers or artichoke hearts for more Mediterranean flavor
