Recipe

1lb cod

1 cup rice flour

10oz beer

2 tbsp vodka

2 russet potatoes

1/2 tsp baking powder

Season the fish with old bay about 30 minutes prior to cooking.

Arahan

In a mixing bowl, add the dry ingredients and whisk before adding the beer and vodka. I like to put a couple ice cubes in the batter as well.

Pat the fish as dry as humanly possible before coating in a 1:1 mixture of starch and flour. Then immediately into the batter then fry at 365F for 5-7 minutes until a rich amber brown. Optionally drizzle in some more batter to add some extra craggly bits. Allow to drain on a wire rack NOT PAPER TOWELS

For the chips seriously just buy frozen ones. There’s no point in making them from scratch. I just did so I could make them square 😆
