INGREDIENTS for 3

2 parsnips

2 purple carrots

5 beetroots

2 tbsp date molasses or honey

150g polenta

1/2 veggie stock

500ml water

For the pesto

100g fresh basil

2 tbsp Parmesan

2 tbsp pine nuts

2 tbsp virgin olive oil

1 garlic clove

Salt and pepper

1 tsp lemon juice

Arahan

Prep the veg in a large tray, drizzle the olive oil and molasses. Cook for 30 minutes at 190 fan.

Polenta - bring everything to the boil cook for 5min, remove from the heat, cover and mix a couple of times.

Blitz the healthy pesto

Serve up! Bon appétit !
