1. Prep the Meat: Trim silver skin and excess fat from the sirloin, cutting it into large 2-to-3-inch chunks.

2. Marinate: In a large bowl or zip-top bag, combine the oil, vinegar, and steak seasoning. Add the beef, ensuring all surfaces are covered.

3. Wait: Refrigerate for 3 to 5 days. This is the key step for the authentic texture and flavor.
