HONEY CAVIAR🍯

1/3 cup water

1/2 cup Local Hive Honey

2 grams agar-agar (measured PRECISELY🤏)

Vegetable oil, chilled (about 2 cups)

Cold water (about 2 cups)

Arahan

Combine water, honey, and agar-agar in a small saucepan. Heat, stirring constantly, until the mixture comes to a boil.

Transfer to a small bowl and let cool slightly. It should thicken but still be loose enough to draw into a syringe, baster or dropper.

Now, drop one drop at a time into the chilled oil. It should form droplets that sink. Let them sit for a few seconds, then stir the mixture to separate the balls.

With a slotted spoon, scoop the honey balls out of the oil and drop them into the cold water. Stir them around gently to shake off the oil.

With the same spoon, gently set the balls onto a paper towel to drain.
