Coconut Roti

240g flour

1 teaspoon salt

85g (1 cup) grated fresh coconut or about 20g desiccated coconut

2 green chopped chillies

1 chopped onion

⅔ cup cold water, or to taste

1 tsp oil, or more if needed

Arahan

1. Put the flour in a large bowl and stir in the salt.

2. Stir in the coconut, chillies and onion.

3. Gradually add the water until the dough is soft and slightly sticky.

4. Knead the dough for 3 to 5 minutes until it is smooth and pulls away from the sides of the bowl.

5. Lightly grease your palms and the top of the dough.

6. Divide the dough into 8 balls and place on a lightly greased work surface.

7. Using the palm of your hand, flatten each ball into a roti about 0.6cm thick.

8. Heat a lightly oiled frying pan over a medium heat. Cook the roti, turning frequently, until golden brown on both sides, 2 to 3 minutes.
