Baby’s 30 Minutes Dinner
Mussels In White Wine

4.5lbs Mussels
4T Butter
4 Large shallots finely chopped
1 1/4C White wine
2-3T Parsley, chopped
Salt and pepper to taste
Bouquet Garni
1 Bay leaves
3 Springs of Thyme
3 Springs of Parsley
Option
4 Garlic cloves, minced
2 Roma tomato, chopped
10 Basil leaves, chopped
Arahan
Clean mussels, remove beards, and discard any broken/opened one. Soak mussels in clean cold water & change water often for 1 hr.
In a pan, combine wine, shallots, bouquet garni, bring to a boil over medium heat & cook for 2 minutes.
Add mussels and cook covered for 5 minutes or until all mussels open. Discard any mussels that do not open. Serve w/ crusty French bread or mix w/ pasta.
Optional
Heat 1T olive over in a pan over medium heat, add garlic, stir until lightly colored.
Add tomato & half of basil, cook for 1 minute.
Add white wine & cook for 2 minutes.
Add mussels and cook covered for 5 minutes or until all mussels open.
Nota
Omit Bouquet garni if cooking w/ option choice.
Sauvignon Blanc or Pinot Grigio are usually my choice, but Chardonnay will work too & easier to find.
1 medium size onion will work too if not shallots.
