Cookie’s Peri Peri Chicken

Sauce
1 small Onion
2 red dry chilies
2 garlic Garlic cloves
2 Green chilies
1 Red bell Pepper
1 tsp Lemon juice
1 tbsp Tomato paste
1 tsp vinegar
Half cup Oil
1 tsp Salt
Half tsp Black pepper
1 tsp Paprika
half tsp garlic powder
half tsp Italian Seasoning
1 tsp Parsley/coriander (fresh or dried)
600 gms boneless chicken
Rice
2 cups Basmati Rice ( Washed & Soaked for 20 min)
4 cups water
1 small onion
1 tbsp garlic chopped
1 cup bell peppers
Half cup peas
1 chicken cube
1 tsp salt
1 tsp cumin
Half tsp turmeric
2 tbsp tomato paste or ketchup
3 tbsp peri peri sauce
Add 3 more tbsp once fluffing the rice
Arahan
Blend together all the above mentioned ingredients with spices and your Peri peri sauce is ready.
Now marinade the chicken with Half cup peri peri sauce. Cook 6-7 minutes each sides. Brush some sauce on both sides while cooking. Take out and set aside.
In the same pan add onion, garlic, peas, peppers and spices as mentioned. Put rice. stir it, add water and let it cook till water dries. the cover & put on Dam at lowest heat for 10-12 min. Serve with chicken and peri sauce. Garnish with coriander. Enjoy!
