Baby’s 30 Minutes Dinner

Leek Potato Bake W/ Egg

4 Leeks (roughly about 500g sliced)

3 Small potatoes or 2 large one

4 Eggs

4T Olive oil

Rosemary

Arahan

  • preheat oven to 400F

  • Thinly slice potato, quick rise. Toss w/ 2T olive oil, salt, pepper, and rosemary to taste. Arrange the potato so it cover the bottom of the 9 x13 pan. Bake in oven for 20-30 minutes.

  • Cut off the root & green of leek, peel off the 1st couple layers, half the leek lengthwise then thinly slice leek. Rise off all the dirt and shake dry.

  • Use 2T olive oil, sauté leek to soften, salt & pepper to taste.

  • Pout soften leeks over the potatoes, make 4 wells, place one egg in each well & top w/ salt and pepper. Back for 5-10 minutes, depends on your preference of egg.

Nota

  • You can replace the sliced potato w/ (leftover) mashed potatoes. We prefer baked potato slice for less calories & carbs intake.

  • Can add a 1t of heavy cream or cheese on top of each egg if desired.

  • Don’t have leeks or don’t like leek (since its a bit oniony, kids may not like it), you can replace it w/ thinly sliced cabbage, spinach/onion mix, or soft cooked kale if you like. We prefer leek for its mildly sweet flavor.
