Baby’s 30 Minutes Dinner
Leek Potato Bake W/ Egg

4 Leeks (roughly about 500g sliced)
3 Small potatoes or 2 large one
4 Eggs
4T Olive oil
Rosemary

preheat oven to 400F
Thinly slice potato, quick rise. Toss w/ 2T olive oil, salt, pepper, and rosemary to taste. Arrange the potato so it cover the bottom of the 9 x13 pan. Bake in oven for 20-30 minutes.
Cut off the root & green of leek, peel off the 1st couple layers, half the leek lengthwise then thinly slice leek. Rise off all the dirt and shake dry.
Use 2T olive oil, sauté leek to soften, salt & pepper to taste.
Pout soften leeks over the potatoes, make 4 wells, place one egg in each well & top w/ salt and pepper. Back for 5-10 minutes, depends on your preference of egg.
Nota
You can replace the sliced potato w/ (leftover) mashed potatoes. We prefer baked potato slice for less calories & carbs intake.
Can add a 1t of heavy cream or cheese on top of each egg if desired.
Don’t have leeks or don’t like leek (since its a bit oniony, kids may not like it), you can replace it w/ thinly sliced cabbage, spinach/onion mix, or soft cooked kale if you like. We prefer leek for its mildly sweet flavor.
