Baked Meatballs

1/2 lb Ground Beef
1/2 lb Ground Pork
Spices (salt, black pepper, garlic powder, onion powder, mexican oregano, crushed fennel, rosemary, herbs de provence, paprika)
1 White Onion (finely chopped & browned)
Parmesan
1 can crushed tomatoes
1 can diced tomatoes
1 can tomato paste (the little ones)
minced garlic
breadcrumbs
1 egg
Optional: mozzarella cheese for topping
Arahan
Preheat oven to 400
1. In a large saute pan, brown onion onion in olive oil.
2. Add garlic and brown lightly. Put half of the mix in a small bowl to the side & the other half in a large mixing bowl.
3. To the large mixing bowl with onion mix add meat, egg, 1/3 c. breadcrumbs, -1/3 c. parmesan, and the spices below:
- salt
- pepper
- garlic powder
- onion powder
- paprika
- ground fennel
- herbs de provence
4. Use your hands to mix until all ingredients are thoroughly combined.
5. Scoop out meat mixture to form even meatballs & place meatballs in the bottom of a lightly oiled 9x13 dish.
6. Using the same saute pan from step 1, brown the top & bottom of each meatball & return the browned meatballs to the 9x13 dish. They should have caramelized dark browning but they do not have to be completely cooked through.
7. After all meatballs are browned, add the other half of the onion mixture to the saute pan along with the tomato paste. Cook the mixture until the paste darkens in color.
8. Add the crushed tomatoes & diced tomatoes to the pan along with the spices below:
- salt
- red pepper flakes
- onion powder
- garlic powder
- rosemary
- herbs de provence
- mexican oregano
Stir until thoroughly combined & reduce heat. Let the sauce simmer for at least 20 minutes, stirring occasionally to avoid scorching.
9. Pour the sauce over the prepared meatballs & bake for 20 minutes.
10. Sprinkle a light dusting of Mozzarella & Parmesan across the top & bake for another 10 minutes.
