One Pot Rice Cooker Chinese Recipe- Chicken, Shiitake Mushro

6 small chicken thighs
15 pieces dehydrated shiitake mushrooms
3 Chinese sausages
2 cups rice
4 cups water
1 inch ginger
4 tbsp oyster sauce
3 tbsp light soy sauce
3 tbsp shaoxing wine
1 tsp white pepper
1 ½ tsp sugar
1/2 tsp salt
1/2 tbsp sesame oil
1 ½ tbsp cornstarch
Optional- 1 tbsp dark soy sauce for color

Rehydrate shiitake mushrooms with cold water for 1 hr.
Cut chicken thighs into bite size pieces. Drain, rinse, and squeeze excess liquid from shiitake mushrooms and slice them into pieces.
Combine the chicken and mushrooms in a bowl. Create the sauce and marinate the chicken/mushrooms for a minimum of an hour.
While the chicken is marinating, slice Chinese sausages into pieces and ginger into thin slices.
After an hour, add in Chinese sausages to the chicken & mushrooms and give that a good mix.
Wash 2 cups of rinse thoroughly and add 4 cups of water.
Add the chicken, mushrooms, and sausages on top of the rice. Add fresh ginger slices on top. Press start on the rice cooker.
The rice cooker brand I used was Tiger. This took about 30 mins to cook and I let it rest for 5 mins before opening the lid and everything was cooked thoroughly. This may differ depending on which brand rice cooker you will be using.
You can mix everything in the rice cooker to make it a chicken fried rice OR separate the protein and rice. Both options are good. Serve with a side of veggies.
