Mouclade A L'Hollandaise

600gr of mussels

1 cup of wine

4 shallots

Butter

Curry powder

200ml of creme fraiche

A lemon

2 egg yolks

Half a block of fish bouillon

Rice

A tablespoon of flour

Arahan

Cut shallots and fry them with a bit of butter until brownish.

Add wine, and mussels maybe a splash of water then a bouillon cube. Leave boiling for like 5 minutes.

In the meantime, in a separate bowl mix egg yolks an entire lemon of lemon juice and 200gr of creme fraiche.

When done, strain into a bowl to keep the and leave the rest in the pot.

In a frying pan add like 30gr of butter and a tablespoon of flour and mix together as it melts. Once it's joined add the leftover water from the boiling step and curry powder, leave simmering for 2 min and then add the egg/creme mixture from before and mix.

Finally add the mussels and shallots and best up until desired. Pour over rice or pasta or something.
