Whipped Feta Dip with Honey and Blistered Tomatoes

2 1/2 cups cherry tomatoes

5 cloves garlic, minced

2 tbsp olive oil

1 tbsp honey

1 tsp salt

1 tsp pepper

pinch of cumin

2 sprigs fresh thyme

8 oz light cream cheese. Full fat cream cheese works too

200 grams light feta

1/4 cup water

2 1/2 tbsp honey

1 tsp pepper

1/2 tsp salt

1/2 lemon, zested

Arahan

Preheat your oven to 450°F (230°C). In an oven-safe dish, combine the cherry tomatoes, garlic, olive oil, honey, salt, pepper, cumin, and fresh thyme.

Roast in the oven for 20 minutes, or until the tomatoes are blistered and slightly caramelized.

In a food processor, blender, or using a hand mixer, combine the cream cheese, feta, water, honey, pepper, salt, and lemon zest. Blend until smooth and creamy.

Spread the whipped feta onto a serving plate or bowl. Spoon the blistered tomatoes over the top, including any juices from the dish. Serve with crostini, crackers, or sliced baguette.
