For the Broth:
1 ½ water
2 anchovy dashi packs
1/2 sliced onion
1/2 green onion (green par)
1/2 green onion (white part)
1/4carrot, thinly sliced
1/4 zucchini, thinly sliced
1 Chongyang chili, thinly sliced, 1 Chongyang chili for broth
For the Sauce:
3 tbsp soy sauce
1 tbsp minced garlic
1 tbsp sesame seeds
2 tbsp gochugaru
1 tbsp sesame oil
1 tbsp minced green onion
1 Chongyang chili, minced
Other:
Somyeon noodles
2 tbsp anchovy sauce
1 tbsp beef dashi powder
Seaweed slices (for garnish)

Prep the Veggies: Thinly slice the carrot, zucchini, chili, and green onion whites. Slice the onion and green onion greens.
Make the Sauce: Mix minced green onion, chili, soy sauce, garlic, sesame seeds, gochugaru, and sesame oil.
Cook the Broth: Boil 1.5L water with dashi packs, onion, green onion greens, and chili. Skim the surface and cook for 10 minutes.
Cook the Noodles: Cook somyeon noodles, then rinse in cold water.
Finish the Broth: Remove solids from the broth, then add anchovy sauce, beef dashi, carrots, and zucchini.
Assemble: Plate the noodles, pour the broth, add sauce, and garnish with seaweed.
