Chicken, Bacon & Ranch Pasta Salad

49g PRO, 47g CHO, 22g FAT

100g of uncooked chicken breast

1 tsp of Italian seasoning

Salt/pepper

1 tsp of olive oil

1 slice of bacon

50g of uncooked pasta of choice

Handful of spinach, chopped

3-4 cherry tomatoes, finely chopped

15g of parmesan chunks

1 tbsp of ranch sauce

10g of panko breadcrumbs

Grated parmesan

Arahan

Season the chicken with Italian seasoning, salt and pepper. Drizzle over olive oil and rub in. Place in the air fryer at 180C for 15-20 minutes until cooked through. Shred with two forks once cooked and let cool.

Cook and boil pasta for 8-10 minutes until al dente. Let cool once done.

Place the bacon under the grill and cook until crispy. Chop into chunks once done.

To a large bowl, add the pasta, chicken, bacon, spinach, tomatoes, parmesan chunks, ranch and season with salt/pepper. Mix well and toss together.

Place the breadcrumbs on a pan on medium heat. Toast until browned.

Serve the salad in a bowl. Top with the toasted breadcrumbs and parmesan.
