Lemony Garlic Green Salad
Serves 2-3

Salad
1 cup of green beans, ends cut off & cut in half
1 cup of snow peas, ends cut off & cut in half
1 cup of sugar snap peas, ends peeled off
1 cup of frozen peas
1 tbsp parsley, finely chopped
1 tbsp chives, finely chopped
1/2 cup pecorino, grated
Juice of 1 lemon
Dressing
2 tbsp olive oil
6 garlic cloves, minced
Zest of 1 lemon
1 tbsp capers
1 tbsp red wine vinegar
1 tsp salt & pepper
To serve
Pecorino, grated

First blanche the greens, for 1 min before transferring to an ice bath. Then strain again.
Next make the dressing by frying the garlic, lemon zest and capers in the olive oil for 2-3 min before turning off the heat and adding in salt, pepper and red wine vinegar. Mix.
Pour it over the greens, add parsley, chives pecorino and the juice of a lemon toss and that’s it!
Serve with more pecorino
