Carrot Cheese Crackers

130g carrot, peeled, steamed and mashed

50g Parmesan or cheddar, finely grated (I used half & half)

140g all-purpose flour or white spelt flour

50g melted unsalted butter or extra virgin olive oil

Arahan

Preheat the oven to 180°C (350°F).

In a large bowl, mix the mashed carrot, grated cheese and oil/butter. Add the flour and mix until a ball of dough forms (use your hands if needed).

Place the dough on a sheet of parchment paper and roll it out thin (the thinner the dough, the crispier the crackers).

Use a sharp knife or pizza cutter to cut into your desired shapes.

Bake for about 15 minutes, or until the edges are lightly golden (timing may vary depending on thickness).

Let the crackers cool before serving.

If the dough feels too sticky to roll, refrigerate it for 5–10 minutes to firm up.
