500 g flour

320 g water

10 g salt

15 g oil

Tomato passata (for topping)

Extra virgin olive oil (for drizzling)

Dried oregano (for sprinkling)

Prepare the dough

In a large bowl, mix the flour with the salt. Add the water and olive oil, then knead until you get a smooth, elastic dough.

If the dough feels too sticky, add a little flour.

If it’s too dry, add a splash of water.

Rest the dough

Cover the dough and let it rest for 10 minutes.

Divide and shape

Divide the dough into 9 equal portions (about 90 g each). On a floured surface, roll each piece into a long, thin strip about 3/4 mm thick.

Prepare for baking

Place the strips on a baking tray lined with parchment paper and lightly greased with olive oil.

Add toppings

Spoon a bit of tomato passata over each strip, drizzle with olive oil, and sprinkle with oregano.

Bake

Bake in a preheated static oven at 250°C (480°F) on the bottom rack for 15–18 minutes, or until the edges are golden and crispy.

I made few with mozzarella for my kids. You can also add anything that you like.
