Fruit Salsa with Cinnamon Sugar Tortilla Chips

For the Cinnamon Sugar Tortilla Chips:
1/2 cup Sugar
2 T Cinnamon
8 (6-inch) flour tortillas
Oil for frying
For the Fruit Salsa:
1 T brown sugar
1 T sugar
1 cup finely diced fresh strawberries (about 1/2 quart)
1 cup finely diced fresh mango (2 small mangoes or 1 large)
1/2 cup finely diced kiwi (@ 2 kiwi fruits)
Half apple finely diced
Nectarine
Grapes
Blueberry
Banana
Whatever fruit you want. Finely diced

Make the cinnamon sugar chips
Pre-Heat frying oil.
Mix cinnamon and sugar together and set aside.
Cut tortillas into triangles.
Fry in batches. ( only takes about a min to get brown and crispy)
Remove from oil to bowl with paper towels. Sprinkle with sugar mixture and then toss the chips.
Fry another batch and then sugar them. Continue until all chips are done.
Make the Fruit Salsa:
In a large mixing bowl, add all fruit and sugars together. Mix
Serve right away with the cinnamon sugar tortilla chips.
Nota
If you would rather bake or air fry chips then do this instead…
Preheat oven to 350 degrees and line baking sheet with parchment paper or foil.
Whisk together the sugar and cinnamon and transfer to a shallow bowl or plate that’s just big enough for the tortillas.
Brush both sides of a tortilla with melted butter. Dip both sides of tortilla in cinnamon sugar mixture, pressing gently to make sure it adheres.
Cut each tortilla into 8 triangles, then transfer to prepared baking sheets, spreading them in a single layer. Bake for 12 to 15 minutes, until tortillas are crispy. Remove from oven and let cool completely.
