For the Beef:
1 lb beef sirloin or flank steak, thinly sliced
1/4 cup cornstarch
1/4 tsp black pepper
1/4 tsp salt
Vegetable oil (for frying)
For the Sauce:
2 tbsp soy sauce
2 tbsp sweet chilli sauce
1 tbsp hoisin sauce
1 tbsp rice vinegar
1 tbsp brown sugar
2 garlic cloves, minced
1 red chili, finely chopped (adjust for heat preference)
1 tsp grated ginger
Optional Garnish:
Green onions, sliced

Toss the sliced beef with cornstarch, salt, and black pepper until evenly coated. Set aside for 10 minutes.
Heat a generous amount of vegetable oil in a skillet or wok over medium-high heat. Fry the beef strips in batches until golden and crispy. Transfer to a paper towel-lined plate to drain excess oil.
In a small bowl, whisk together soy sauce, sweet chilli sauce, hoisin sauce, rice vinegar, and brown sugar to make the sauce.
Remove excess oil from the skillet, leaving about 1 tablespoon. Add garlic, ginger, and red chili, sautéing for 30 seconds until fragrant.
Pour the sauce mixture into the skillet and bring it to a simmer. Add the fried beef strips and toss to coat them evenly in the sauce.
Cook for an additional 1-2 minutes to let the flavors meld.
Garnish with sliced green onions and sesame seeds. Serve hot with steamed rice or noodles.
