Filled Cookies (Dad's favorites)

FILLING
3 C. chopped dates and/or raisins
1 c. Sugar
1c. water
1 tsp lemon rind
2 Tbsp lemon juice
1/4 c chopped nuts
DOUGH
3-1/2 c. flour
1 C. Sugar
1 tsp. baking soda
1 tsp. salt
1 tsp. baking powder
1 c shortening
2 eggs
4 Tbsp. milk
2 tsp. vanilla
Arahan
Filling: Combine dried fruit, 1 c sugar, and 1 c water in saucepan. Cook 15 minutes or until thick, stirring constantly. Remove from heat and add 1 tsp. lemon rind, 2 Tbsp. Lemon juice, and 1/4 c. chopped nuts.
Dough: Combine flour, 1 c sugar, baking soda and powder, and salt, and cut in 1 c. shortening until mix resembles coarse meal. Blend in eggs, milk, and vanilla. Mix until well blended.
Roll out on floured board to 1/8 inch. Cut into rounds.
Place spoon of filling on and top with another round.
Bake at 350 degrees until nicely browned.
