Fibre Fix, Episode 3: Chocolate Button Cookie Slices

If you are anything like me and love the viral M&S chocolate button shortbread, I took inspiration from them to make these cookie slices but this time something that will give me sustained energy and show you how easy it is to use snacks to get a bit closer to my daily fibre and protein goal!!💪
The secret weapon this time comes from the plant protein chickpeas! Not only are the packed with fibre and protein, they also contain good amounts of iron, magnesium and zinc! The peanut butter gives these some healthy fats and vitamin E and the chocolate buttons make these satisfying to hit that mid-afternoon chocolate fix! 🩷🎉
Ingredients ⬇️ these made 8 big slices or 16 smaller ones
2 x 400g tin chickpeas, drained and rinsed - 135g smooth peanut butter or almond butter - 160g honey or maple syrup - 2 eggs - 30g almond flour (ground almonds) - 30g self raising flour - 1 1/2 tsp cinnamon - 3 tbsp flaxseed (optional) - 120g giant chocolate buttons - Sprinkle of sea salt
Recipe⬇️ - Preheat the oven to 170 degrees (fan assisted)
To a food processor, add the chickpeas, peanut butter and honey and blend until as smooth as possible
Transfer to a mixing bowl and add in the flours, flaxseed, eggs, cinnamon and chocolate buttons and mix well
Transfer to a lined baking dish and bake for 25-28 minutes
Leave to cool completely before slicing
Store in the fridge for up to 4 days or freeze for up to 3 months!!
These are great reheated in the air fryer with a bit of ice cream!!!😍😍
