2 scoops collagen

5-6 pitted dates

1/3 cup pumpkin seeds

1/4 cup chia or hemp seeds

1/4 cup walnuts (optional)

75g Coconut Sugar

2 Tablespoons Honey or Maple Syrup

180g Butter

140g Blueberries (fresh or frozen)

Arahan

Preheat the oven to 350F (fan-assisted) and prepare a baking tin by greasing or lining.

Pulse oats, dates, nuts, and seeds in the food processor until dates and nuts are mostly ground up.

Melt the butter.

Combine butter with oats and all other ingredients.

Mix well, taking care to ensure the oats are all coated.

Tip into the prepared tin.

Press down and to the sides with the back of a spoon until the oats are compact and the top is level.

Bake for 30-35 minutes until the top is golden brown.

Leave to cool completely in the tin before cutting into bars or squares.

Refrigerate to set completely.
