Blueberry Oat Cottage Cheese Muffins

The perfect breakfast! These muffins are balanced with lots of protein, healthy fats and carbs.

1 cup rolled oats

1 cup all purpose flour

1 tsp baking soda

1/2 tsp salt

1 cup blended cottage cheese

1/3 cup maple syrup

1 egg

1/4 cup milk

1 tsp vanilla extract

1 lemon zested

4 tbsp lemon juice

1 cup blueberries

Crumble *optional*

1/4 cup rolled oats

1/4 cup all purpose flour

1/4 cup brown sugar

1/4 cup melted butter

Start by preheating your oven to 350F

In a small bowl combine your oats, flour, baking soda and salt. Mix together and set aside.

In a large bowl combine your blended cottage cheese and maple syrup. Mix well before adding in your egg, milk and vanilla extract. Add in your lemon juice and zest. Mix again and add in your dry ingredients. Fold to combine and add in your blueberries.

Add your batter to a lined muffin tin. Top with your crumble and place in the oven on 350F for 22-25 minutes.
