Maple Butter Sugar Cookies

1 egg (room temp)
1 cup organic light brown sugar (can use truvia for healthier option)
3/4 cup softened butter (dough)
1 tsp vanilla exract
1 tsp baking soda
1 tsp salt
2 1/4 cup all purpose flour
1/3 cup maple syrup
6 tbsp vegan butter (icing)
1 1/2 cups powdered sugar
Nutmeg
Cinnamon

Preheat oven to 350F. Manually by hand in a mixing bowl, mix your softened butter and brown sugar together until lumps are no longer visible. Do not over mix - over mixing results in a frothy, foamy dough.
Then, add in vanilla and egg. Make sure your egg has been sitting outside of the fridge and is room temperature.
In a separate bowl, combine flour, salt and baking soda. Then, add dry ingredients to wet.
Once the batter is well incorporated, roll dough into balls and place on a baking sheet lined with parchment paper. Press down slightly with your fingers to flatten the tops and then bake for 10 minutes for a firm cookie, bake for 9 for a doughy cookie.
Once the cookies are out of the oven, place them on a cooling rack.
Allow cookies to cool before you start your frosting. Beat your butter until fluffy. Then add in your powdered sugar. Add in maple syrup. Sprinkle with cinnamon and nutmeg.
Once the cookies are completely cool, frost them!
